Our Estate Sauvignon Blanc is made exclusively from biodynamic® certified grapes grown on our Purisima Mountain Vineyard. The majority of these vines are planted on a steep hillside, laden with large amounts of limestone, traversing to a less steep section that turns to sand. The 2009 growing season brought the warmest weather in three years, pushing up harvest dates. New vineyard techniques along with low crop yields, created the perfect environment to create an excellent wine, balanced by intense fruit flavors and crisp acidity. WINEMAKING 100% estate grapes from four select Purisima Mountain Vineyard sites Grapes were whole-cluster pressed to stainless steel tanks Juice was cold settled for 48 hours, then racked to stainless steel tanks and barrel for fermentation Fermentation was kept cold and lasted approximately 20-45 days depending on the lot, using both cultured and native yeasts After primary fermentation, SO2 was added to inhibit malolactic fermentation A combination of 87% stainless steel fermentation along with 13% barrel fermentation allowed for greater complexity and depth of flavor The wine was bottled lightly fined and filtered in January of 2010
